Knead the einkorn flour, yogurt, water, and salt into a soft flatbread dough and rest for 20 minutes.
Take walnut-sized pieces from the dough and roll into thin rounds.
Cook the flatbreads in a hot pan for 2 to 3 minutes on each side, until they puff and lightly spot.
Spread butter on one side of the hot flatbread and sprinkle plenty of crumbled kes cheese on top.
Fold into a half-moon or roll up, sprinkle with red pepper flakes, and serve immediately.
