Trim the onions without cutting too deeply into the roots.
Soften the tomatoes and garlic in a 200°C oven for 18 minutes.
Fry the stale bread in a little of the olive oil for 2 minutes.
Blend the almonds, roasted peppers, tomatoes, garlic, bread, grape vinegar, paprika, salt, and olive oil into a coarse sauce.
Cook the onions in a grill pan for 12 minutes, turning them until the outside blackens.
Peel away the blackened outer skin.
Serve the calcots hot with the romesco sauce.
💡 Tip: Do not clean off too much of the outer onion layer; it protects the onion over the heat and keeps the inside from drying out.
