Crumble the surk cheese with a fork, finely chop the roasted pepper, and chop the parsley.
Mix the surk, roasted pepper, parsley, thyme, red pepper flakes, and olive oil in a bowl to make the filling.
Heat a nonstick pan over medium-low heat and warm both sides of the lavash for 30 seconds to make them flexible.
Open the lavash on the counter and spread the filling evenly.
Roll the lavash tightly into wraps.
Cut the wraps in half, plate them, and serve hot.
