Peel the celeriac and cut it into 1 cm half-moons; combine half the lemon juice with 1 cup water and keep the celeriac in it so it does not darken.
Crush the garlic, chop the parsley and dill, and toast the sesame seeds separately in a dry pan for 2 minutes, shaking the pan, then transfer to a bowl.
Heat the olive oil in a wide pan over medium heat and turn the garlic for 30 seconds; add the drained celeriac and saute for 8 minutes, turning occasionally.
Sprinkle with salt, black pepper, and the remaining lemon juice, turn for 2 more minutes, then stir in the toasted sesame seeds and remove from the heat.
Divide onto a serving plate and scatter parsley and dill on top.
Serve hot and balance with extra lemon wedges or yogurt.
