Drain the boiled chickpeas until they completely absorb the water and dry them with a paper towel.
Finely chop the onion, garlic and parsley.
Blend the chickpeas, chopped aromatics, cumin, salt and flour until they remain in coarse powder form.
Press the mixture into 4 meatballs and let them rest in the refrigerator for 10 minutes.
Heat the olive oil in the pan and fry the falafel patties for 3 minutes on each side.
Make a fluid sauce by whisking tahini, lemon juice and water.
Put lettuce, tomato, falafel patties and tahini sauce on burger buns and serve.
💡 Tip: Using well-drained boiled chickpeas instead of canned chickpeas will help the meatballs fry without falling apart.
