Warm the milk to body temperature; add the dry yeast and 1 tablespoon sugar and wait 5 to 10 minutes, until foamy.
Add the egg, melted butter, remaining sugar, and salt to the yeasted milk and mix with a whisk.
Add the flour gradually and knead for 8 to 10 minutes, until you have a soft dough that does not stick to your hands.
Cover the dough and let it rise in a warm place for 60 minutes; it should double in size.
For the filling, mix the tahini, cinnamon, and optional molasses.
Deflate the dough and roll it thinly into a rectangle.
