Cut the tofu into large cubes and drain it on paper towels for 10 minutes.
Turn the tofu cubes in vegetable oil for 8 minutes, until the outside turns golden.
Boil the sweet soy sauce, grape vinegar, brown sugar, water, and salt for 4 minutes to make the sauce.
Coarsely crush the garlic, shallots, and hot green peppers in a mortar.
Put the fried tofu in a bowl and distribute the crushed aromatics over it.
Pour the warm sauce over the tofu, wait 3 minutes, and serve.
💡 Tip: Do not cut the tofu too small or dry it out too much; when gejrot sauce seeps through the crisp exterior, the flavor balances out.
🍽️ Serving suggestion: Serve tahu gejrot in small bowls with optional cucumber slices and unsweetened iced tea.
