Cut the chicken into 2.5 cm cubes, rub with salt and pepper, dip in egg, then coat with the flour and starch mixture and shake off excess.
Cut the onion and red pepper into 2 cm squares, grate the garlic and ginger, and cut the pineapple into 1.5 cm pieces.
Heat oil in a wide pan or wok to 175°C. Fry the chicken in batches for 5 minutes, until golden, and drain.
Pour excess oil from the same pan, then stir the onion, garlic, and ginger for 1 minute. Add the red pepper and saute for 2 more minutes.
Add ketchup, soy sauce, rice vinegar, sugar, and pineapple. Boil for 3 minutes, then mix starch with water and stir it into the sauce to thicken.
Add the crispy chicken to the sauce and toss over medium heat for 1 minute. Remove from the heat and serve hot with rice.
💡 Tip: Fry the chicken in two rounds: first cook at 160°C, then crisp at 190°C. Add the starch to the sauce at the last moment so it does not clump.
