Cut the chicken into thin strips, the ginger into matchsticks, and the pepper and onion into long strips.
Mix the soy sauce and fish sauce in a small bowl.
Heat the oil in a wok and turn the garlic and ginger for 1 minute.
Add the chicken and saute for 5 minutes, until it changes color.
Add the mushrooms, pepper, and onion and stir-fry over high heat for 4 minutes.
Pour in the sauce and stir for 2 minutes, until glossy.
Serve hot over rice.
