Soak the bamboo skewers in water for 20 minutes so they do not burn on the grill.
Finely slice the scallions.
Knead the ground chicken, egg, ginger, scallions, starch, and salt for 4 minutes.
Divide the mixture into 12 koefte and press them onto skewers in long oval shapes.
Thicken the soy sauce, rice vinegar, honey, and sesame oil for 5 minutes.
Cook the skewers in a hot grill pan for 8 minutes, turning them.
Brush the koefte with sauce and cook for 3 more minutes, until glossy and sticky.
Sprinkle with sesame seeds and serve hot.
