Slice the eggplants, salt them for 15 minutes, and dry them.
Slice the potatoes thinly and fry both sides in olive oil.
Fry the eggplants and peppers separately until softened and colored.
Turn the garlic in a little oil, add grated tomato, and cook the sauce for 12 minutes.
Layer the potatoes, eggplants, and peppers in a baking dish.
Spread the tomato sauce over the top.
Bake at 180°C for 10 minutes to bring the layers together, then serve with parsley.
