Wash the bamboo shoots with plenty of water.
Boil the shoots in 2 cups of water for 8 minutes and drain.
Remove the hard joints and cut the soft pieces short.
Put the bamboo, remaining water, baking soda, and salt in a clean pot and cook for 18 minutes.
Chop the onion and tomato and add them to the pot.
Loosen the peanut butter with 3 tablespoons of hot water and stir it into the pot.
Thicken the sauce over low heat for 12 minutes and serve hot.
💡 Tip: Briefly cleaning the dried bamboo in its first boiling water keeps the sauce from becoming overly smoky and sharp.
