Soak the cracked wheat in plenty of water for 8 hours.
Put the chicken thighs, drained wheat, water, and half the salt in a pot.
Cook the mixture over low heat for 70 minutes.
Remove the chicken thighs and pull the meat from the bones.
Return the chicken meat to the pot and add the black pepper.
Stir and mash the wheat and chicken mixture with a wooden spoon for 35 minutes.
Heat the butter with red pepper flakes for 2 minutes.
Spoon the thick mixture onto plates and serve with the pepper butter.
