In a large bowl, combine the flour, salt, and water with a kneading spoon and work for 6 minutes; cover the smooth dough and let it rest for 15 minutes.
Mash the lor cheese with a fork, add half the zahter, the crushed walnuts, and 1 tablespoon olive oil, and mix to prepare the filling.
Divide the dough into 4 balls and roll each into a thin 25 cm round; brush with the remaining zahter and olive oil.
Spread the lor filling over one side of the yufka and fold into quarters to shape the katmer; brush the top with olive oil and sprinkle with sesame seeds.
Heat a nonstick pan over medium-low heat and cook the katmers for 14 minutes, until both sides are golden; press lightly from time to time to spread the heat between the layers.
Remove from the pan and rest for 1 minute; slice into triangles and serve hot.
