Split the simits open, cut the kashar cheese into small cubes, and chop the parsley.
Spread olive paste over the lower half of each opened simit, scatter the kashar cheese on top, sprinkle with thyme and black pepper, and close with the top half.
Heat a nonstick pan over medium-low heat and grease it with butter, then lay in the toasts.
Cook covered for 6 minutes, until both sides turn golden and the kashar melts.
Transfer the toasts to a plate, slice in half, sprinkle parsley over the top, and serve hot.
