In a large bowl, combine the flour, salt, warm water, and 1 tablespoon olive oil, then knead for 8 minutes until you have a soft dough.
Cover the dough and rest for 20 minutes so the gluten relaxes.
Divide the dough into 4 balls and roll each one as thin and round as possible with a rolling pin.
Brush the rolled dough with the remaining olive oil; spread the olive paste thinly, crumble the curd cheese evenly, and sprinkle the optional parsley.
