Peel the potatoes and cut them into large cubes.
Put the potatoes in a pot and add the water and salt.
Cover and cook over medium heat for 25 minutes, until tender.
Whisk the strained yogurt with crushed garlic and 2 tablespoons of water until smooth.
Transfer the cooked potatoes to a serving plate and drizzle the yogurt over them.
Melt the butter and foam the red pepper flakes in it for 45 seconds.
Pour the pepper butter over the yogurt and serve warm.
💡 Tip: Moving the potatoes to the serving plate without crushing them keeps the yogurt sauce from making the dish heavy.
