Soak the rice in warm salted water for 20 minutes, then drain.
Sear the beef in a pot for 10 minutes.
Chop the onion and carrots small and add them to the meat.
Add the butter and olive oil and cook the vegetables for 5 minutes.
Add the rice, salt, black pepper and allspice and stir for 3 minutes.
Add the hot water and cook the pilaf over low heat for 18 minutes.
Toast the almonds and pine nuts in a pan for 3 minutes.
Let the pilaf steam for 10 minutes, then top with almonds, pine nuts and parsley.
💡 Tip: Soaking the rice in warm water helps the grains cook separately without breaking.
