Add the remaining sugar spoon by spoon and beat until soft peaks form.
Add the vanilla and fold in the flour mixture in three additions with a spatula.
Transfer the batter to an ungreased tube pan.
Bake the cake at 170°C for 34 minutes, until risen and dry on top.
Invert the pan and cool for 60 minutes.
Serve with strawberries and lemon zest.
