Bring the water and salt to a boil in a deep pot.
Add the flour gradually, stirring constantly with a rolling pin handle or wooden spoon.
Cook the dough over low heat for 25 minutes, until glossy and dense.
Sprinkle walnuts and a little sugar on the serving tray.
Lightly oil the spoon, take spoonfuls of hot dough, and arrange them on the tray.
