Peel the turnips, slice them into half moons, and wash in plenty of water to remove bitterness.
Soften the onion in olive oil for 6 minutes.
Add the tomato paste, garlic, red pepper flakes, and salt, then fry for 2 minutes.
Add the turnip slices and bulgur to the pot, then pour in the hot water.
Cook over low heat for 25 minutes, until the turnips are tender.
Rest the pot for 8 minutes so the bulgur absorbs the sauce.
💡 Tip: Thinly slicing the turnips shortens the cooking time; thick slices can stay firm in the center.
