Rinse the vine leaves and chop them into thin strips.
Saute the onion and tomato paste in the pot for 4 minutes.
Add the vine leaves and turn them for 3 minutes so their tart flavor moves into the sauce.
Add the bulgur and 1 liter water, then cook for 20 minutes.
Add the lemon juice just before taking the soup off the heat and serve hot.
💡 Tip: Chopping the vine leaves very finely keeps the fibers from staying long in the soup.
