Soak the rice in warm salted water for 15 minutes, then rinse until the starch runs clear.
Soak the almonds in warm water and peel them.
Melt the butter in a pot and turn the almonds for 3 minutes, until lightly colored.
Add the rice and toast for 3 minutes, until the grains look separate and glossy.
Dice the quince, then add the raisins, quince, allspice, cinnamon, and salt to the pot.
Add the meat stock, cover, and cook over low heat for 15 minutes.
Rest the pilaf for 7 minutes and serve with the almonds visible on top.
💡 Tip: Do not dice the quince too small; if it melts before the rice cooks, the aroma remains but the bite-size texture disappears.
