Clean the melki mushrooms and cut them into large pieces.
Dice the onion for cooking.
Finely chop the green peppers and grate the tomatoes.
Heat the olive oil in a pan and cook the onion for 5 minutes until softened.
Add the green peppers and melki mushrooms and cook for 12 minutes until their liquid evaporates.
Add the grated tomatoes, salt and black pepper and saute for 8 more minutes.
Serve hot sprinkled with parsley.
