Mix the wheat flour, baking powder, and salt in a large bowl.
Add the vegetable oil and warm water, then knead only until the dough comes together.
Press the dough into a round 2 cm thick.
Heat a cast-iron pan over medium heat and place the dough in the pan.
Cook the first side of the bannock for 10 minutes, until browned.
Turn and cook the second side for 9-10 minutes; the inside should come out dry.
Rest for 5 minutes and slice.
💡 Tip: Do not knead the dough as long as bread dough; because baking powder does the lift, brief mixing gives a softer crumb.
