Cut the tops from the caiguas, remove the seeds, and soften them in boiling water for 5 minutes.
Fry the onion and garlic in olive oil for 5 minutes.
Add the beef and cook for 8 minutes, until it changes color.
Mix the chopped peanuts, olives, eggs, cumin, and salt into the filling.
Fill the caiguas.
Put grated tomato in the pot and place the stuffed vegetables inside.
Cover and cook over low heat for 25 minutes.
💡 Tip: If caigua is unavailable, use small stuffing peppers; the same method works with a thin-skinned hollow vegetable.
