Trim the tough ends of the ciris greens and cut the leaves into 3 cm pieces.
Dice the onion small and cook it in butter and olive oil for 6 minutes, until lightly pink.
Add the tomato paste and fry for 1 minute.
Wash and drain the bulgur, add it to the pot, and turn with the onion for 2 minutes.
Add the hot water, salt, and black pepper and close the lid.
Cook the pilaf for 10 minutes, then add the ciris greens and stir.
Cook for 10 more minutes over low heat, then let it steam for 8 minutes before serving.
💡 Tip: Ciris greens are available briefly at markets; trim the tough stems and add the leaves during the last 12 minutes, otherwise the color fades.
