Cut the zucchini and tomatoes into large pieces and rinse the bulgur.
Put the zucchini, tomatoes, olive oil, and salt in the pot.
Cook the vegetables in their own juices for 6 minutes.
Add the bulgur and hot water, then close the lid.
Cook the dish over low heat for 18 minutes.
Add the plums after turning off the heat and let rest for 8 minutes so the sourness stays fresh.
💡 Tip: Adding the green plums near the end leaves a light sourness without letting them fall apart in the pot.
