For the katmer dough, knead the flour, water and salt for 7 minutes.
Rest the dough for 20 minutes so the katmer can be rolled thin.
Mix the cokelek, parsley and olive oil to prepare the filling.
Roll out the dough, spread the filling and close it into katmer shape.
Cook the katmer on a griddle for 12 minutes total, until both sides are browned.
Brush butter over the top, rest for 3 minutes and slice.
