Soak the hulled wheat in plenty of water for 8 hours.
Drain the wheat and cook with water and half of the salt for 40 minutes, until tender.
Whisk the yogurt, egg, flour, and remaining salt in a separate bowl until smooth.
Add 2 ladles of hot wheat liquid to the yogurt tempering to warm it, then stir it into the pot.
Cook the soup over low heat for 12 minutes without boiling.
Scent the dried mint in butter for 1 minute, drizzle over the soup, and serve.
💡 Tip: Soak the hulled wheat overnight; dry wheat softens late inside the yogurt tempering and makes the soup overly tangy.
