Knead the flour, water, and 1 teaspoon of the salt into a firm dough that does not stick to your hands.
Cover the dough and rest it for 20 minutes so it relaxes before rolling.
Mash the Abaza cheese and mix it with dried basil to prepare the filling.
Roll the dough slightly thicker than manti dough and cut 7 cm rounds.
Place cheese filling in the center of each round, close like a half moon, and press the edges.
Boil water in a large pot, add the remaining salt, and cook the haluj for 10 to 12 minutes.
Mix the yogurt with crushed garlic and heat the ground red pepper in butter for 1 minute.
Drain the haluj and serve with garlic yogurt, pepper butter, and ayran.
💡 Tip: If you cannot find Abaza cheese, use lightly salted Circassian cheese; kashar melts too much and may leak into the boiling water.
