Put the granulated sugar, water, and lemon juice in a saucepan and boil until the syrup reaches 118°C.
Whip the egg whites in a clean bowl for 4 minutes, until they form a firm foam.
Keep whisking while pouring the hot syrup into the egg whites in a thin stream.
Mix the cinnamon, ginger, ground cloves, and allspice in a separate bowl.
Add the spice mixture to the halva base and whisk for 6 minutes, until glossy and thick.
Lightly coat the mold with rice starch and spread the halva into it.
Rest the halva at room temperature for 30 minutes, then cut it into small squares.
