Slice 400 g of mushrooms and finely chop 1 onion.
Sauté the onion and mushrooms in 1 tablespoon of butter for 6 minutes.
Add 4 cups of water and boil over medium heat for 10 minutes.
Loosen the sour cream with 1 ladle of hot soup liquid so it does not curdle.
Add the cream to the pot and heat over low heat for 2 minutes.
Finish with black pepper and serve without letting the soup boil hard.
