Slice the mushrooms and dice the onion.
Saute the onion and mushrooms over medium heat for 6 minutes.
Add the vegetable stock and paprika, and boil for 15 minutes.
Temper the smetana with hot soup liquid.
Add the sour cream to the pot and heat for 2 minutes without letting it split.
Serve hot with dill or black pepper.
💡 Tip: Temper the sour cream at the last moment before adding it; the soup will not split.
