Knead the flour, yeast, warm water, 3 spoonfuls of olive oil, and half the salt into a soft dough.
Let the dough rise for 45 minutes.
Finely chop the spinach and onion, rub them with the remaining salt, and rest for 10 minutes.
Squeeze the spinach mixture and make a filling with sumac, lemon juice, black pepper, and remaining olive oil.
Divide the dough into 12 pieces and roll each piece into a small circle.
Add the spinach filling, close the dough into triangles, and press the edges.
Bake the fatayer in a 190°C oven for 20 to 22 minutes, until browned.
