Cut the zucchini into large cubes and spread them on an oiled tray.
Roast the zucchini in a 200°C oven for 12 minutes so the edges brown lightly.
Turn the onion in a pot for 4 minutes, then add the washed bulgur.
Toast the bulgur for 2 minutes so the grains do not stick while cooking.
Add the roasted zucchini and hot water to the bulgur.
Cook over low heat for 12 minutes, then let it steam covered for 6 minutes.
Use a wide spoon when fluffing the pilaf so the zucchini does not fall apart.
