Remove the pin bones from the salmon fillet and pat it dry with paper towels.
Mix the salt, granulated sugar, and black pepper, then spread it over every side of the salmon.
Scatter half the dill in a container, place the salmon on top, and cover with the remaining dill.
Wrap the salmon in plastic wrap, place a light weight on top, and cure in the refrigerator for 24 hours.
Turn the salmon and refrigerate for another 24 hours; the timer is limited to 24 hours, so track the second day manually.
Whisk the mustard, honey, lemon juice, and olive oil.
Slice the cured salmon thinly, lightly scrape off dill crumbs, and serve with rye bread and sauce.
💡 Tip: Before curing salmon at home, remove the pin bones with tweezers and use very fresh fish; salmon with a noticeable odor is not suitable.
