Knead 3 cups flour, water and salt into a soft dough.
Rest the dough for 15 minutes so it does not pull back when rolled thin.
Roll the dough portions thinly and spread poppy seed paste over the surface.
Fold the dough and press the edges so the poppy seed paste does not run into the pan.
Cook the gozlemes on the griddle for 4 minutes, until the first side is browned.
Cook the second side for 4 minutes and serve hot.
💡 Tip: Spreading the poppy seed paste too thickly makes it more likely to leak out while cooking.
