Pick over the borage greens and wash them in plenty of water.
Boil the greens in boiling water for 4 minutes, then drain.
Finely chop the onion, crush the garlic, and roughly chop the borage.
Soften the onion in olive oil for 5 minutes.
Add the garlic and tomato paste, then fry for 1 minute.
Add the borage to the pan and cook with salt and black pepper for 8 minutes.
Rest the saute for 5 minutes and serve warm with lemon.
