Dice the onion, then wash and finely chop the greens.
Soften the onion in half of the butter for 5 minutes.
Add the tomato paste and fry for 2 minutes.
Add the einkorn bulgur and water, then cook over medium heat for 18 minutes.
Whisk the yogurt in a separate bowl and temper it with small additions of hot pilaf liquid.
Stir the tempered yogurt into the pot and cook over low heat for 5 minutes.
Add the mallow, parsley, dill, mint, and salt, then cook for 4 minutes more.
Heat the red pepper flakes in the remaining butter for 1 minute and drizzle over the pilaf.
