Mix the ground rice, ground lentils, yogurt, and salt into a thick batter.
Rest the batter at room temperature for 25 minutes.
Add the grated zucchini, ginger, chopped green chili, and baking soda to the batter.
Heat the oil in a pan and crackle the mustard seeds for 1 minute.
Mix half of the tadka into the batter and pour the rest into an oiled mold.
Spread the batter in the mold and sprinkle with sesame seeds.
Bake the handvo at 180°C for 38 minutes, until the edges brown.
Rest for 10 minutes and cut into squares.
💡 Tip: Do not leave the batter too runny, zucchini releases water, so a thick cake-batter consistency works better.
