Take tangerine-sized portions from 500 g cold risotto rice.
Place mozzarella in the centers and close the rice tightly so the cheese does not leak into the hot oil.
Coat the suppli balls with egg and breadcrumbs.
Fry the suppli in 170°C oil for 5 minutes, until golden.
Drain for 3 minutes and serve hot so the cheese keeps its stretchy texture.
💡 Tip: Chill the rice mixture fully; warm filling falls apart while you shape the balls.
