Soak the rice in warm salted water for 20 minutes.
Rinse the rice until the water runs clear, then drain.
Heat the butter and olive oil in a pot.
Add the rice and toast gently for 4 minutes without breaking the grains.
Add the vegetable stock, hot water, and salt, then close the lid.
Cook the pilaf over low heat for 13 minutes.
