Boil the water and sugar over medium heat for 5 minutes to make a clear syrup.
Add the apricots to the syrup and cook for 12 minutes, without letting the skins fall apart.
Lift the apricots out with a slotted spoon and let them cool for 15 minutes.
Open each apricot from the middle and fill with kaymak.
Drizzle syrup over the top and serve cold with walnuts.
