Mix the flour, egg, water, and half the salt into a firm dough, then rest it covered for 30 minutes.
Finely chop the parsley and mix it with the strained yogurt and black pepper for the filling.
Roll the dough on a floured surface to 2 millimeters thick and cut it into 5x5 centimeter squares.
Place a small coffee spoonful of yogurt filling in the center of each square, fold into a triangle, and press the edges closed with your fingertips.
Boil salted water in a wide pot and cook the triangles for 8 minutes.
Lift the kaypak out with a slotted spoon, spread on a serving plate, and spoon garlic yogurt over the top.
Foam the red pepper flakes in butter for 1 minute, pour the sauce over the yogurt, and serve hot.
💡 Tip: Drain the strained yogurt further in cheesecloth before using it; if the filling stays too loose, the triangles open in the boiling water.
