Firm the meat in the freezer for 30 minutes, then slice it into thin leaves.
Slice the tomatoes and cut the peppers into large pieces.
Peel the garlic cloves and leave them whole.
Spread the meat on a tray and toss with olive oil, salt and black pepper.
Place the peppers, garlic, tomatoes and finely chopped tail fat on top.
Bake Kayseri firin agzi at 220°C for 60 minutes.
When the meat is tender, brown the top for 10 minutes.
Rest the tray for 10 minutes and serve hot.
