Mash the nor cheese with a fork and mix it with sugar, raisins, cinnamon, and 1 egg.
Whisk the milk and vegetable oil in a separate bowl.
Open the yufka sheets on the counter and brush them lightly with the milk mixture.
Divide the filling among the yufka sheets and roll them loosely.
Arrange the rolls on a tray and brush the tops with the remaining egg.
Bake the borek at 180°C for 30 minutes until browned.
After removing from the oven, rest for 10 minutes and slice.
💡 Tip: If the nor cheese is very wet, leave it in a sieve for 15 minutes; excess liquid makes the yufka doughy.
