Rinse and drain the lentils, then finely dice the onion.
Soften the onion in olive oil for 5 minutes.
Add the tomato paste and pepper paste, and fry for 2 minutes.
Add the lentils, water, salt, black pepper, cumin, and red pepper flakes to the pot.
Cook the soup for 20 minutes, until the lentils break down.
Add the fine bulgur and simmer over low heat for 8 more minutes.
Add the dried mint and rest the soup for 4 minutes.
Serve hot with lemon wedges.
💡 Tip: Add the bulgur only after the lentils have fully opened; if it goes in at the start, it can stick to the bottom and make the soup heavy.
