For the syrup, boil the granulated sugar and water for 10 minutes, add the lemon juice, and cool.
Whisk the flour, yeast, warm water, and salt into a fluid lokma batter.
Leave the batter to rise for 45 minutes.
Heat the oil over medium heat.
Take small pieces of batter and fry in the oil for 5 minutes until golden.
Transfer the hot lokma to the cold syrup and let them sit for 2 minutes.
Serve with clotted cream and Antep pistachios.
💡 Tip: The batter should flow heavily from the spoon; if it is too thick the lokma will not puff, and if too thin it will absorb oil.
