Mix the molasses and water in a pot and warm over medium heat.
Loosen the starch with half a cup of cold water.
Pour the starch mixture into the molasses in a thin stream, whisking constantly to prevent lumps.
Cook the mixture for 18 minutes, until it reaches a thick pudding consistency.
Add the walnuts and cinnamon and stir for 3 more minutes.
Pour the koftur into a moistened tray and let it stand at room temperature until firm enough to slice.
💡 Tip: Do not add starch directly to hot molasses; loosening it first with cold water is the key to smooth koftur.
